dutch baby baked pancake
3 tbsps unsalted butter, divided
3 large eggs
½ cup whole-grain pastry flour
¼ cup soy flour
¼ tsp salt
½ cup heavy cream
5 tbsps granular sugar
½ tsp cinnanmon
2 golden delicious apples, peeled, cored, et
cut n2 thin slices
1. heat oven to
425degreesF. place 2tbsps of the butter in a 12-inch nonstick ovenproof
skillet; set
aside. whisk
eggs, pastry flour, soy flour, salt, cream, 3tbsps of the sugar, et 1/4cup
water
together until
smooth.
2. place skillet in oven until butter melts.
pour batter n2 skillet. bake 15mins.
3. while pancake is baking, melt remaining tbsp.
of butter dans un med skillet over med heat.
add remaining
2tbsps sugar, cinnamon, et 1/4cup water. bring 2a boil; add apples. cook 15mins
over a low heat, stirring , until apples are tender et most du liquid has
evaporated.
4. after removing pancake from the oven, spoon
apples dans la center. serve.

Florentine omelets
filling:
2 (7 to
10 ounces ea) microwavable bags spinach leaves, cooked accordn to bag
directions
1 tbsp
butter
¼
cup chopped onion
1 garlic
clove, minced
½
tsp salt
¼ tsp pepper
4 ounces
diced Italian fontina ou asiago fresco cheese
4 tbsps
butter
8 large
eggs
½
cup water
1 tsp
salt
1. for
the filling, drain cooked spinach, then squeeze dry on paper towels. transfer
spinach to a bowl.
heat
butter n a 10-inch nonstick skillet over med heat, add onion, et cook 3mins
until lightly browned.
add
garlic, salt, et pepper et cook 30secs more. stir n2 spinach, then toss in
cheese, et stir again.
2. wipe out skillet. melt 1 tbsp du butter over medium
heat. whisk 2 eggs avec 2 tbsps water et 1/8 tsp salt in small bowl. pour egg
mixture n2 la skillet et cook 1 min until bottom is set. push back on one side
of egg et allow loose egg to flow n2 exposed skillet. cook 1 to 2 mins until
top is set. add one-quarter of filling on one side of omelet, run knife around
edge et fold over to cover filling; slide out onto platter. repeat steps three
more times for a total of 4 omelets. serveeflorentine omelete

philadelphia double-lemon cheesecake bars
1/2 cup of water 2 tbsp. cornstarch
2 cups vanilla wafer crumbs 1 tbsp. lemon
zest
3 tbsp. butter, melted 1/3 cup
lemon juice, divided
4 pkg 8oz each philadelphia cream cheese, 1/2 tsp.
vanilla
softened 4
eggs, 1 separated
1 3/4 cups sugar,
divide 3 tbsp. flour
heat oven to 325degreesF & line a 13x9-inch pan w/foil. mix
wafer crumbs & butter; press onto bottom of pan. bake 10mins. beat cream
cheese, 1 cup sugar, flour, lemon zests, 2 tbsp. lemon juice & vanilla
w/mixer until blended. add 1 egg white & remaining 3 whole eggs, beating
after each just until blended. reserve yolk for later use. pour batter over
crust. bake 40mins. or until center is almost set. cool 1hr. refrigerate 4hrs.
mix cornstarch & remaining sugar in saucepan; gradually stir in water &
remaining lemon juice. bring just to boil. stirring constantly; cook & stir
until clear & thickened. lightly beat reserved egg yolk until blended; stir
in 2 tbsp. hot cornstarch mixture. return to remaining cornstarch mixture in
saucepan; cook & stir 1min. or until thickened. cool. spoon glaze over
cheesecake. refrigerate 1hr.use foil handles to removed cheesecake from pan b4
cutting to serve.

receipe
italian chicken bundles
6 boneless, skinless chicken breast halves
2 cups corn flakes cereal, coarsely crushed, 1 cup
1/2 (10-12oz) package frozen spinach, thawed & well
drained
1 (8oz) package light cream cheese, softened
2 tablespoons chopped sun dried tomatoes
2 tablespoons shredded parmesan cheese
1 teaspoon minced garlic
1 teaspoon dried italian herbs
1/2 teaspoon salt
1/2 teaspoon ground black pepper
non-stick cooking spray
preheat oven to 325 degrees. place chicken breast between sheets
of waxed or parchment paper & flatten (using flat bottom of large frying
pan) until even thickness. repeat with each chicken breast, set aside. place
1/4 cup of the crushed cereal in bowl and add 1/2 teaspoon of the italian
herbs. in medium mixing bowl combine remaining 3/4 cup of the crushed corn
flakes with remaining ingredients until well blended. place about 1/3 cup of the
filling on top of each flattened chicken breast & roll up to encase the
filling. place each stuffed chicken breast on baking rack that has been sprayed
with non-stick spray. spray outside of each breast with non-stick spray &
sprinkle top with some of the remaining crushing cereal. bake for 25-28 minutes
or until internal temperature of chicken reaches 165 degrees as measured with a
thermometer.
